One of my favorite kitchen sink lunches is turning last night’s dinner leftovers into a creative (and sometimes bizarre) quesadilla. Living in LA I’ve got access to fresh tortillas 24/7 from Northgate Market, but pretty good tortillas can be found almost anywhere. Look for ones that are soft and pliable, they’ll give you a great texture and not dry out in the pan.

I’ve been obsessed with this spinach dip for years. I’ve only found it at one restaurant, so I recipe tested endlessly and cracked the code. Then changed the name by one letter so they don’t get too mad at me.
Coconuty Movie Theater Popcorn
This is a straightforward simple recipe to make really good popcorn at home without a microwave. It requires a TOUCH of arm strength but other than that is basically fool proof.
Cinnamon Sugar Fries
I'm a sweet potato fan. I like them roasted whole with butter and salt. It doesn't take much to please me when it comes to potatoes. However, if I feel like kicking it up a notch this is an easy side dish that I really like.
Overly Dilled Tzatziki With Crudités
This is a real easy recipe. Basically the only technique here is to remove excess liquid from the cucumbers so that the yogurt remains creamy and thick. To get the excess liquid out of the cucumber put the cuc’ bits in a colander and sprinkle with a little salt. Let the salt pull the water from the cucumber for a few minutes and then wring ‘em out between paper towels. It's best coooollllldddd. Serve with some carrots, cucumber, and radish. Or with pita bread. Or as a side for chicken.
Everything Bagel Oven Roasted Potato Chips
CHIPS! You can make ‘em! I love them served as a side at dinner with roasted chicken and a green salad or as a snack if someone is forcing me to watch sports. Only trick here is that you have to WATCH them because they can go from delightfully crispy to burnt very quickly.
Millennial Beet Hummus
Once I started making this dish I started noticing all the places that hummus could and should be: on a sandwich, served with sliced veggies, thrown on top of a salad, served beneath roasted white fish, eaten on a cracker. Hummus makes almost anything more delicious, and this pink one will make any dish look 1,000% more fancy.
Please Pass the Stuffing Muffins
Crispy on the outside, soft and speckled with flavorful goodness on the inside. There really isn’t anything to dislike about the stuffing muffin. Try ‘em out on your Thanksgiving guests this year and prepare for the compliments to roll into the new year. :)
Thai Pumpkin Soup
This super-simple Thai pumpkin soup gets loads of flavor from garlic, ginger, and curry paste. Coconut oil adds a smooth, silky quality, and a garnish of fresh lime juice and cilantro really brings the flavors together. You can easily make this in advance, reheat at your leisure, and garnish accordingly. Enjoy!

Fun fact about me - I'm allergic to chicken, so the whole buffalo wing thing isn't an option for me. But I really miss ordering something that comes with weirdly wet carrots and celery and dipping them plus the tiny little chicken arm into a rich sauce and ending up with hands coated in grease. Turns out, the wing is actually my least favorite part, so creating an extra crispy potato wedge that's perfect for sauce grabbing and full of flavor is actually my preference. It took me a long time to create a satisfying gluten free and dairy free cookie that I actually wanted to eat. This. Is. The. One.
The dough will be best if you let it rest in the fridge overnight, so put on your big girl pants and don’t eat the raw cookie dough! It’s worth it! Resting the dough is the only way to get your gluten free cookie to have the height of a regular cookie.
“Subway” Style M+M Cookies
When I was a kid the theater by my house had a Subway next to it so I’d always sneak in a 6 inch sub and a gooey cookie. I know Subway isn’t generally the pinnacle of culinary success but you KNOW that is a delicious cookie. Although this cookie isn’t identical, as they use ingredients that are hard to acquire for home cooks, these cookies ARE super delicious and when cooked properly hit that perfect intersection of cooked, but ssssuuuuuperr soft and chewy.

You’d never imagine that a banana could whip up into such a rich-and-ice-creamy texture, but here we are. It’s pretty magical. Does it fully replace one’s desire for the occasional McConnell’s, no. But is it a delicious and healthy weeknight alternative that’s quick to make and super satisfying to dig into on the couch? Yes. I am obsessed with mint chocolate chip ice cream, so this combo has become the norm at my house, but you could add ingredients to make this banana ice cream into any flavor your heart desires.
