Honey Jalapeño Black Beans
This is a recipe that I make all the time. My husband and I go through a ridiculous amount of black beans, it's a good alternative protein source. I serve them on brown rice with some roasted vegetables, in a taco, tossed under a salad, or heck, straight out of the pot. The longer you let the beans cook the more they develop a texture that mimics refried beans.
Ingredients:
3 cans of black beans
2 tablespoons olive oil
1 yellow onion, chopped
2 cloves of garlic, minced
1 jalapeño, minced
1 tablespoon honey
½ teaspoon salt
½ teaspoon pepper
Juice of one lime
¼ cup cilantro, chopped

Heat olive oil in a medium-sized saucepan over medium heat
Once hot add the onion and a touch of salt
Let the onion sweat
Add the garlic and jalapeño
Cook until aromatic and everything is soft
Add the honey
Add black beans
Add the rest of the salt, pepper and lime juice
Put lid on pot and simmer for 30 minutes, stirring occasionally
Beans should almost become the texture of refried beans, if this isn’t happening just add a little more olive oil and let them sit a bit longer
Once soft and a mashed consistency add the cilantro
Add salt, pepper, and lime to taste
