Cinnamon Honey Butter Sweet Potatoes
As we deal with some of these unprecedented changes and issues around COVID-19, I know our kitchen inventory is always in flux. Sometimes you go to the store and it's flush with everything you need… and sometimes it’s not. As time progresses we might be cooking for friends who feel ill and dropping food off. It’s a great time to try to find some zen cooking for yourself and your people.

IN ANY CASE, what I’m trying to provide here are simple recipes with pantry staples or veggies that you probably already have. I want to provide little ways to jazz things up to make them feel fun, without having to make you run back out to the store. So here are some REALLY delicious sweet potatoes with a cinnamon honey butter that just looks cool! You can use the butter on your toast in the morning, tossed into oatmeal, on said sweet potatoes, or, just eat it. I mean YOU DO YOU. If you’re gonna do the potatoes, roast a few extra so you can have them tomorrow!
INGREDIENTS:
¼ cup unsalted butter
1 tablespoon honey
⅛ teaspoon sea salt
¼ teaspoon cinnamon
Pinch of cloves
4 small sweet potatoes (or whatever you’ve got), washed and dried
LET’S COOK:
Preheat your oven to 400°F. Put your butter out on the counter to soften in a small mixing bowl.
Set the potatoes on a parchment-lined sheet pan, poke a few holes into each potato, and toss ‘em in the oven. Roast them for one hour, flipping them over after 30 minutes, like the beach seals that they are.
Meanwhile, whisk the cinnamon, honey, and salt into the softened butter. If your butter isn’t soft yet you can microwave it, but only til it’s soft — don’t let it melt!
Lay out a piece of plastic wrap and put the butter in the middle, roll it up like a burrito, and put it in the fridge!
After the potatoes have been cooking for an hour stick a knife through one, if it slides through easily, the potatoes are done. If there is any resistance AT ALL, keep baking until they’re soft as butter. That’s when they’re the most delicious!
Once the potatoes are cool enough to handle, open ‘em up, slice off a piece of your sweet, sweet butter and watch it melt!
